Saharoza sintaza (EC 2.4.1.13, UDPglukoza-fruktoza glukoziltransferaza, saharozna sintetaza, saharoza-UDP glukoziltransferaza, saharoza-uridin difosfatna glukoziltransferaza, uridin difosfoglukoza-fruktozna glukoziltransferaza) je enzim sa sistematskim imenom NDP-glukoza:D-fruktoza 2-alfa-D-glukoziltransferaza.[1][2][3][4][5][6][7][8][9][10] Ovaj enzim katalizuje sledeću hemijsku reakciju

Mada se UDP generalno smatra preferentnim nukleozid difosfatom za sintezu saharoze, brojne studije su pokazale da ADP isto tako može da bude efektivan akceptor.
