Vanilat monooksigenaza (EC 1.14.13.82, 4-hidroksi-3-metoksibenzoatna demetilaza, vanilatna demetilaza) je enzim sa sistematskim imenom vanilat:kiseonik oksidoreduktaza (demetilacija).[1][2] Ovaj enzim katalizuje sledeću hemijsku reakciju:
